2 cups cooked chicken (you could use raw, I had this cooked in my freezer)
2 cups mixed frozen vegetables
2 cups chopped potatoes
1 cup mixed dried pasta (from left over packages)
5 cups chicken broth
1 tsp salt (if needed)
Mix all the above and ladle into 4 quart jars. You could easily make 5 quarts by only filling the
jar halfway with solids and increasing the chicken broth.
You are not supposed to can pasta, thats why I only used 1/4 cup per jar. It can thicken it too much. I used two types, some leftover colorful, twisted rotini, and some small shells.
I have canned pasta before and it usually comes out like the pasta in a soup can, very soggy.

I am not brave enough to try canning pasta. I always just add cooked pasta after I open the jar.
I do not add enough to make it thick. It's just really mushy and I have tried several different types of pasta's, even dried tortellini's. It's too mushy for the most part. We will eat these jars fast as we have company coming. I do experimenting when I get brave. Pudding is next......going to try it with coconut milk.
I like to can soup. I just add the pasta when I'm warming it, so the texture stays nice.

Cyn, I just love your blog, it is fantastic, as you do we have always experimented with all kinds of recipes, using common sense of course, some things have improved canning, and sometime I think they think up things just to scare people away from canning. I live in a densley populated Old Order Mennonite area of western Virginia, they can everything. Canning has been a twelve month way of life for me for decades, the pressure canner is always out, waiting for the next sale.
Right now I having a bowl of home canned pepper steak.
I have already shared you blog with several people since finding it this evening, in between batches of pork loin, and beef chunk, 32 pints today alone.
Wow! You are busy! Share your recipes.....I run out of ideas and look through cookbooks and just got back from a trip to Illinois where I looked for (used) canning jars. The pepper steak sounds good.
